Halloween down our street is really busy. The kids are out in force, together with their parents, scary pumpkin heads line the streets and the neighbours have their bags of treats ready. It’s a really lovely party atmosphere and it got me thinking last night that maybe next year we’ll have a halloween party with a few fireworks, sweets and pumpkin soup. It’ll be a great way to use our collective pumpkin innards, which would otherwise go to waste, and pumpkin soup is so smooth and tasty… (just like my hubby.. tee hee!) especially with a blob of Greek yoghurt in the middle and loads of black pepper. The best bit is it’s so easy to do and is really cheap.
Fry up some onions and garlic, then add the pumpkin flesh with seeds removed. When the flesh turns golden add a good quality stock to cover the contents of the pot. Simmer gently until it’s cooked through. Blitz and serve with a blob of Greek yoghurt and black pepper.
